A few additional user-controllable items have been added to Photoshop 7:
1) Explicit control of Black Point Compensation in Proof-setup
2) Explicit control of Black Point Compensation in the Print with Preview
dialog
3) Within the PDF save dialog, you can "downgrade" a ICC version 4 profile
to a version 2 profile, useful for backwards compatibility with older CMMs
and other products that only comply with the earlier versions of the ICC
specification.
4) And, of course, general "enhancements" to the core Adobe Color Engine
(ACE), which is now version 2 (as apposed to version 1 in Photoshop 6).

Everything's the same as far as I can tell in Photoshop 7, with a couple
exceptions:
1.) Updated support for the latest ICC profile (4.0.0) specification (see
http://www.color.org/newiccspec.pdf );
2.) There is now NO way to ignore and NOT use embedded profiles without
being forced to discard a profile and save changes in the case of a
mismatch; i.e. you can't just open a bunch of files, ignore their profiles
if they mismatch your workspace, and close them without being asked to save
changes... a controversial move for those who want to quickly check files
without honoring any profile information! This effectively makes it
impossible to be completely outside the ICC-based color architecture...
I don't notice anything else different!
