OK, but will everything work the same? And if it is so, why a profiles calls

for its preferred CMM?
Each CMM translates the math needed to build the tables for the conversions
(to simplify a lot) in their own unique way. So the results will be
different with each CMM yet quite similar just the same. What you could
really watch out for if experimenting with CMM's is scum dot in the
conversions to CMYK highlights. This is the most apparent and blaring fault
of some combinations that should be avoided. Other areas are much more
difficult to validate such as wide space conversions from say Kodak Romm.
Bruce Lindbloom would be expert help on this.
The ICC format was written to include tags so that a profile could still use
the Colorsync API , remain for use in an open system , yet still ask for a
preferred CMM for whatever needs the developers thought appropriate at the
time. Some will perform some magic if the CMM is available such as the so
called Imation CFM of Creo-Scitex, yet with a normal CMM the profile will
function as any other ICC profile.
