Your paper options (Epson papers only of course) are based on the black ink
you have installed (matt or photo).
NCA will give you the best color gamut but just lays down too much ink in
many cases so I'm not surprised that you ran into some posterization. You'll
have to fool around with different settings to get a compromise between
gamut and best ink converge.
I've come to the conclusion that our biggest problem is the driver itself.
After spending two days using the ColorByte RIP and CANNED profiles (getting
amazing output), it seems clear to me we are all wasting an enormous amount
of time trying to profile pretty awful data from the printer. Ever printed a
file without a profile using NCA? Gives you an idea how non linear and butt
ugly the Epson driver really is.
