In Photoshop 5, go to File > Save a copy as and CHECK the option to
exclude
non-image data. That will strip the profile but leave the numbers
intact.

What I did was open the files in PS5 with colour management turned off,
ignoring the conversion box (I'm glad I kept that copy on my disk!). The
files did then look dark, same as on the printer proof. Then I choose
convert from Eurostanfard into *Photoshop 5 Default CMYK* profile and
this modified the way they looked to what I wanted, then saved without
colour profile. Maybe this was not the best way of working. Anyway, I
will see if the truth is in the new proofs tomorrow!
