Depends (you were expecting that, weren't you?!). Seriously, a lot is going
to depend on the profiling application you'll be using. That will pretty
much dictate what targets you can choose from in most cases.
Personally, I tend to use a target with relatively fewer patches
(ProfileMaker's TC3.5 chart for example) for commercial press profiling or
anything that is "well-behaved" like an analog proof or Iris inkjet.
For less well-behaved devices like most inkjets and possibly
newsprint/uncoated offset, I'll use a target with more patches, usually in
the 600-900 patch range. The less linear a device is, the more patches you
may need to characterize it properly.

Don't get TOO hung up on the number of patches. More is not always better.
It has as much to do with the profiling application and what it DOES with
the data as to how much data you give it. With a good profiling app, a
couple hundred patches might do as well as a bad profiling app that you feed
thousands of patches! In fact, I can say that too many patches can even
introduce banding and posterization problems where less patches can result
in a "smoother" profile.
Purchase good profiling software first and then go with their profiling
target recommendations as a start.
