Best CMYK profiling software.

I am about to publish a book of photographs and the printer is working with me to develop a profile for the the press and paper we will use. The goal is the highest possible quality of color reproduction. The originals are all large format with appropriate color correction and a wide-gamut color space. The scans were made on a very high quality drum scanner. It's clear from other experience that all the limitations will be in the 4 color process. My questions are as follows:

1. Is there a particular profiling package best suited for this application?

(Notes: I own a DTP41 and have access to a Spectrolino.

We will make two full speed runs on the press to make the profile, one for linearizing and one for the final profile.)

2. What are the things to watch out for (we will use the same paper for everything, have proper color bars, match the press setups, etc. I use Optical for calibrating my monitor, Taylor Lighting 4700 proofing light, a calibrated Epson 5000 for proofing at my end)?
