Another Scott chiming in, here.

1. You CAN disable all internal controls, to a point. Any inbound RGB is
still converted to (at the very least) the internal CMYK space of the Epson
5000. The CMYK Simulation of NONE causes the CMYK data to be presented to
the Epson for printing using only the Calibration curve to alter the data
(not a big deal...). You can also use the Match Copy option to send the
outbound CMYK directly to the 5000 without doing anything to it (NOTE: you
have to set Match Copy in the driver; there is no option in the Fiery's
setup for this option).

I've used ColorWise Pro Tools on other Fiery devices to simulate other
printers with very good matching results (you just have to understand the
DMax and DMin of the 5000 and make sure you're not trying to hit higher or
lower).

The CMYK swatches that your profiling software uses are perfectly fine.
