Which Camera or CMYK profile do you want to use might be a reasonable
question?

While there are many options for using profiles, try the supplied camera
profile, sometimes they are just as good (or better) than a custom camera
profile. As for CMYK, again a question to ask is where is the image going to
be printed?

Do you know or are you just attempting to make a CMYK image that might work
for various cmyk printing processes?

If you know where the CMYK image is going to be printed, then get a custom
profile for that process. In a perfect world that would give you a correct
conversion (at least theoretically). If you don9t know where the CMYK image
is going to be printed then ..... you have to take a guess. IMHO, A
reasonable guess is the Photoshop 6 CMYK default profile U.S. Web Coated
(v2).
