It's simply because the Epson yellow ink is a thick yellow/orange. This
combined with a bit of UV will ask the created profile to lighten and take
out the orange cast compared to CMYK process inks. The result is a speckling
of cyan dots in a less dense yellow. You can edit the cyan out of the yellow
but you'll never get a brilliant yellow from the current Epson inks to
compare to process yellow.
