Sounds like you've got Photoshop accurately transforming into the specific
flavor of CMYK, but your Color Settings aren't set to embed CMYK profiles,
so the converted data isn't getting assigned any profile, and is labelled
"Untagged CMYK" as a result. The RGB profile showed up because you have a
different setting for embedding RGB profiles, or the profile came tagged
already.
