They're both great proof printers as both have variable dot. Be advised that
Hp is still releasing firmware updates for the 5000 which have been having
an impact when used with BEST Colorproof. (once you get it running smoothly,
I wouldn't upgrade any firmware!!)
The real answer depends on what type of proofing (offset, newsprint,
contract, imposition, un-attended...) you're looking to do. For single sided
proofs off a roll, you can go with either. For double sided
imposition/contract proofs, I've put in Epson 10000s with the dye inks. Both
printers spray ink very, very fast...so be prepared that your ripping step
will be your throughput limiter.
