Been there, done that. But most of the problems I had with QuarkCMS had
to do with QuarkXPress 4.11 introducing a major and catastrophic bug. Not
that QuarkXPress 4 CMS was easy to figure out by any means, but it is
consistent in a convoluted way.

It depends on what file formats you're using. It's true that it uses ACE
whereas QuarkXPress will use whatever the ColorSync control panel is set
to use. In my experience the biggest difference is the inability to use
black point compensation when using ColorSync, but it's usually not a big
deal. Acrobat doesn't give you any control over rendering intents on a
per image basis. Actually the only rendering intent you can get out of it
by default is relative colorimetric with black point compensation on. For
proofing, this is not ideal (the black point compensation being on is
more of a problem than the lack of white simulation, although the option
for white simulation would be nice too).
There are so many pitfalls of color management and PDF right now it's not
even funny. Realistically, you need something like iQueue 140 from Gretag
Macbeth, or a prepress system capable of accepting PDF, and properly
using ICC profiles to generate proofs. And once PDF is made, PitStop Pro
is the most reliable means of making mode changes, or assigning profiles
to individual objects in the PDF.
However, if you play your cards correctly, it can be reasonably useful.
The problem is getting your head around Acrobat which isn't quite like
any other Adobe application - and they even used different terminology
here and there.
