I would certainly encourage you to do your own testing using whatever film,
lens and scanner combo you prefer.

I've taken 18mb files from one shot cameras and interpolated them to well
over 100mb, then scanned 2x2 film to 100mb and the interpolated camera
capture was much superior due to the reasons already discussed. An 18mb
capture from a digital camera (a good one) is in now way comparable to an
18mb scan (or one twice that size). So to answer your question, you can take
a file off scan back and make an enormous file from it.

Take a look at Landscape photographer Steven Johnson. He has a few books you
should examine.
