I beg to disagree. The (extremely good) grey balance we get on inkjets would
would certainly get worse if we tried to hand edit profiles. If a profile
package doesn't give you accurate greys, it's simply not doing its job.
A complicating factor is that the benefits and limits of tristimulous
(aka metameric) colormatching are not well appreciated by many people.
