I am surely not in the position to criticize you but do you consider what
will happen in the printing press? I.e. whether it is possible to get a
print run within specifications like these. I do not even think of a reprint
in this scenario.
You may want to consider a different RIP software. In Germany many users
(including myself) have made very good experience with GMG's ColorProof
software. Although you can use ICC profiles with the software it also has
its own color management (non-ICC compliant) which is based on 4-dimensional
tables (i.e. which retains the original black channel when proofing
CMYK->CMYK). It also has a sophisticated spot-color handling in case that
this may be a decisive factor for you. You'll find more information on the
software on the web at www.colorproof.de.

We don't have Iris Print's but their predecessors, which are the Realist
5015 (2-up) and 5030 (4-up).

Are they stable?
Let me give you a categorization of the stability of proofers I am
experienced with (from more to less stable):
1. Dupont Cromalin (analog system, needs film)
2. Dupont Digital Cromalin
3. Epson 7000 et al.
4. Iris Realist (I am not saying they are unstable but I had to categorize)
I think it is as important to choose the right software as it is to choose
the right proofer.
