The reason Photoshop 7 wants to use srgb is because the camera manufactures have not yet done their job of making more than one know color space easily available. This is not a Photoshop 7 issue. Photoshop is just the messenger.
And as you point out you can disable this so Photoshop 7 does help the situation some.
It would also be nice if Adobe fixed (yes I said fixed) PS7 so you can open multiple images with the color manaagement policies off, so you do not get a message that says you have a profile attached and you have to make a choice as to honor it or throw it away. This would make opening a large group of files easier, like it was in PS6.
