It's a question of the output from the scanner, not the gamut or color space
that the scanner sees natively. All scanners are native rgb. The signals are
then converted , amplified and always manipulated in various ways. Same is
true of all digital capture devices. So for any scanner that converts only
to CMYK then this is a colour build in a model that corresponds to its
output. If the output is CMYK it will be clipped from the larger rgb native
space.

The output space can only be preformatted then for a destination device
which will have colour characteristics linked to the destination device, not
related to the scanners abilities except for perhaps any limitations in
respect to the destination space. To compare rgb space (s) however one must
include a reference of it's chromacities to "map" its colours onto a grid.
CMYK can be compared within a defined profile, model space or assumed to a
standard pre-defined colour build or space such as SWOP.
