Keeping the whites white

We're using Monaco proot to make our cmyk outpout profiles.

When we profile Matchprint and use it as our reference profile our
inkjet proofs come out with a yellow cast to the paper backgroud.

It appears that somehow we're mapping that yellowish tinge of the
Matchprint base to the white of the inkjet paper.

Is there a way we can have the paper come out as white?

What I mean by white is "no tone." Have no ink print where there is the
plain "no dot" base of either the reference or the final output.

And, if we do, what happens to the rest of the colors?
