There are a couple of ways of going about doing this...
1. Take an existing color CMYK profile that does a good _tonal_ job, and then desaturate it in a profile editor.
2. In Photoshop open up the "Color Settings" dialog. For Gray choose "Load Gray". Then find the CMYK profile that has the black channel you like and Photoshop will pull the black channel out into a grayscale profile.... this is assuming you have a profile with a pleasing K channel...
3. Contact us directly and we can do something like this for you (we build a number of different custom utility profiles). This sort of stuff is done "by hand" using some strange tools we have here. The main benefit is the ability to really roll the effect / function you want..
