While that should make the profiles available to all users on a
workstation, I'm trying to go a step further. I'd like to make my profile
the default for all users on a workstation. I wonder if I could achieve
this by just removing any others and therefore mine would have to be
default. I'll have to play with this and see what I can do.

Well you could certainly copy the necessary profiles into a server folder
and share that folder on the LAN. I would suggest though to copy the
profiles to each machine and put them in the root library, as if the server
goes down the links will be confused thereafter replacing them by system
defaults which may not be cached.
By putting them all in the root >library >Colorsync>profiles they'll be
available to all users on that station.
