Camera makers are free to do it either way and there are advantages and
disadvantages to either encoding. Encoding in sYCC allows for a larger image color
gamut to be represented but there is the possibility of quantization and gamut
mapping issues, as with any large gamut color image encoding. Encoding
directly in sRGB reduces these issues but also limits the image color gamut. So one
size doesn't fit all and each camera maker chooses its own compromise. Some
make it clear what they chose (or allow you to change it) but most don't. So its
a bit difficult for you to choose which works best for you. Keep in mind that
sRGB and EXIF were originally developed for users with a lower level of
sophistication than you.
But this doesn't really have much to do with embedding an actual profile,
which will still have to consider gamut and quantization issues. What it does do
is make the solution cleaner, extensible, and clearer to the user what color
image encoding he really is getting. For the sRGB user, things would work
essentially as they do now. For the more sophisticated user, he can change the
encoding in-camera or in software, depending on the choices available. That's a
good thing!
