It depends Joe. Are you attempting to do an "offset press" or similar proof
simulation thru this RIP/printer combo or do you want to simply print to it
using the full printer gamut available? In other words, is this a "proofer"
or a "printer"?
If it's some sort of press/proof simulation, you should simply convert to
the CMYK press target of your choice in Photoshop and then have the proofer
RIP assume this profile as the source profile and the printer profile as the
destination. The rendering intent in this case should be either relative or
absolute colorimetric. What you should get is a press simulation proof on
your Mimaki.
If you simply want to PRINT instead of proof, then you could EITHER leave
your file in your default RGB working space and then use this as the assumed
RGB source profile in the RIP and set up your preferred rendering intent for
the conversion (perceptual or relative colorimetric most likely) OR convert
to the printer's profile prior to sending it to the RIP. If you convert to
the printer destination profile in Photoshop, you'll need to make sure you
print it on the Mimaki with ONLY the settings activated that produced the
original profiling target. This typically means disabling color management
on the RIP but leaving any RIP-based linearization and total ink limit
settings in place. What you'll get is a print using the available gamut of
your printer profile.

I guess I am just confused of how CMYK files should be prepped to send to my
