After the mapping of the color is done, simply convert to the Lab PCS
and stick it in the ICC profile table. Profiles made this way will not

I guess it would take a really complex CMM to do its interpolation in any
other space than Lab or XYZ,

The interpolation can be done in XYZ or LAB.
It's the construction of the profile (especially out of gamut mapping) that needs to be done with more care - preferably in a more uniform colorspace (such as CIECAM variants, WITH appropriate environment settings).
