Gamut Mapping

I do a lot of profiling at my shop and I have a couple of tools I
created in Excel to help me do things like plot printer gamuts on the
chromaticity chart. I can do this without a problem when a device is
not profiled, however, once the profile is done, my files are
influenced by the input profiles in the RIP.
The file I have is a set of 24 swatches, going in 25% increments from
primary CMY to RGB. I then convert the data from L*a*b* to XYZ and plot
the XYZ data on the CIE chart. Without using profiles, I can get a
sense of how wide my profile is, but once the profile is done and I
want to compare the finished results, I cannot, because the file is CMY
and goes through the appropriate CMYK profile.
If I convert this file to L*a*b* in Photoshop, will there be any
influence on the conversion? If so, is there any reference on what the
true primary and secondary values in L*a*b* would be. I can create a
new file in Lab without a problem, however, I haven't any idea on what
the Lab values would be...
I don't know if this makes any sense at all.
Thanks in advance for the help.
