we have created profiles on ceramics (as well as silk, cotton, CD's, snowboard/ski surfacing, etc, etc). As with most profile building, getting good measurements is everything. Depending on the thickness of the material you might want to look into the GretagMacbeth Spectrolino/Scan as you can change the filters as needed. ProfileMaker or Monaco should do a good job of building the profiles although ProfileMaker allows custom targets which you may need to get into if the printing system/ceramics behave strangely in any part of the color space..
