It's much more than that. RAW file size is considerably smaller than tiff
and you have the ability to use curves before the interpolation to maximize
highlight and shadow detail. That's true, at least, with Nikon Capture. I
don't own CameraRAW so I can't speak to that. Just try bringing up shadow
detail from a dark jpeg and you'll appreciate this.
Also, NEF is an excellent archival format both because of file size and
because interpolation software grows in quality. If, two years from now, you
want to print an image you shot today you'll likely be able to deliver more
carefully controlled output.
There's more but I'm already over the top for this colorsync list.

Right. The color temp is nothing more than a descriptor in the header of the
NEF file. Easily changed and resaved in the NEF without ever altering the
original sensor data.

Yes.

independent of the shooting mode (RAW vs JPEG vs TIFF-RGB)?
In a NEF (RAW) it's just a tag in the header. Since I primarily shoot NEFs I
can't address the other modes. For that reason I can't help with your next
<snipped> question either.

Probably the most focused and disciplined forum for Nikon DSLR's is here:
