When you print from Freehand or InDesign to a non-postscript printer, Postscript is NOT created. (this was a problem in early versions of InDesign where you could not print to these printers). It is more like the QuickDraw path where there is the possibility of output looking different.

Quartz does read embedded profiles in images but the specification of the printing profile is still set in the print driver (generically for all OS X apps) or in the print/print with preview dialogs of Adobe and other applications.
As far as I know Quartz only converts raster color and not vector color. Vector / layout apps like Freehand, Illustrator, InDesign & Quark can potentially manage vector color however and how this occurs depends on the application. The one exception at the moment is EPS which is unmanageable in any app unless you have the Compass Pro XT plugins for Quark...
