I believe that Canon profiles are source input profiles. I just looked and
indeed they don't show up in the scanner associations. It may be that the
scanners that rely on plug-ins aren't considered devices as such. All my
profiles for other various scanners although installed , are not associated
with the scanners, such as run thru Silverfast.

Use assign profile then in this case. You can also assume sRGB and modify
the colors as you see it in PS.

Apple would have liked developers to apply Os system preference calls yet
not many developers actually implemented the calls. Thus Apple simplified
the UI for us end users. All the functionality you need is still well and in
that preference pane.
