I should be having "device profiles", "document profiles" and "CMMs", along
with Import/Export workflow buttons. Has the Colorsync panel been
simplified, giving me less options, or am I missing something?

That panel is an extra 5 dollars.

Okay, I'm kidding. It was intentionally removed because the ColorSync Utility device settings are more specific and more useful.
