Well... in this case you are applying your profile backwards. By selecting your "built-on-top-of-their-profile" profile as the simulation profile you are simulating your printing system on your printing system.

This sounds like it would not work at all but I have seen people use profiles this way - by accident - in Photoshop where they choose the proof setup of their print profile as the document source. They basically simulate their printer on their printer.

Strangely enough it gets close enough so sometimes people think it's working... it's not. If you want to color manage your Fiery the only way I have found to do it reliably is to profile it as an RGB device and then apply the profile upstream in the application or in a color server.... good luck.
