The Archival ink you mentioned is more likely the problem than the paper.
What you need to see this for yourself is a gamut viewer like ColorThink
from Chromix. ColorThink will allow you to compare the 3D plot of the gamut
of the DuPont WaterProof you are trying to match with the 3D gamut plot of
the paper profiles of the Epson 7500. You will undoubtedly see that the
proofer falls short especially in reds.
I have tested dozens of papers with Archival ink and only 1 or 2 of them
even came close to equaling the gamut of your WaterProof. My suggestion
would be to invest in an Epson 7600 or any Epson printer with Ultrachrome
ink.
