You can in fact measure an IT8 7/3 in Measure Tool from Gretag MacBeth and
open the data from the ISO12647 or similar press run data to compare the
press to inkjet/software/media simulation.
This gives you the delta E values in a range of CIE models. You're correct
in saying that even though close it will not be an exact match but that is
the nature of simulation in any case. It is color management that brings it
so close, yet getting it closer takes questionable edits that may or may not
create other problems worse than the original.
