I don't know whether the source data changed between the U.S. Sheetfed
Coated and U.S. Sheetfed Coated v2 profiles--I don't think it did. (That
should be easy enough to verify by looking at the device->PCS tables,
unless they were re-gridded, but I haven't looked). If that's the case,
I can tell you exactly what the original data was: it was measured from
MatchPrints pulled from 175-line screen film on the MatchPrint
Commercial substrate. At the time, there was no viable standard dataset
for U.S. commercial printing.

It would have been a good idea if Adobe had documented the print
conditions that US Sheetfed was meant to represent, but alas, they
forgot, and the information is no longer recoverable-I've tried. (!)
The paper stocks were quite different, as noted by Chris. The ink hues
are pretty similar-the biggest difference is in the magenta, and it's
not clear whether the difference is entirely attributable to the paper
of they were in fact different inks. Again, it would have been useful
to know that.
The way the tone curves run seems to suggest a 175-lpi screen (or
wildly uncontrolled dot gain for a sheetfed press).
And that's about all anyone has been able to determine!
