Actually, I've just determined that if I choose "Create PDF > From Multiple Files..." from within Acrobat, that any RGB profile seems to be managed properly, although the CMYK ones are still not. So that simplifies my choices. (In answer to your question, it would be at various times either a projector for presentations or a monitor for book shows).
So, I guess my strategy will be to set up a Photoshop action to resize the images the maximum useful size required for either of those applications and convert to any standard RGB profile, then create the presentation form within Acrobat rather than from Photoshop.
At this point, I'm just wondering why things aren't fully color managed from either workflow, since Adobe products tend to have this together, and would still appreciate an answer to that if anyone has one (or knows that I'm still missing some setup option).
