John,
The short answer is to create a profile with GCR after the linearization and
ink limiting process in the rip. To figure out how much GCR you need or
want you have to either have been told to use a certain amount or you
have to experiment with the GCR option in your profiling package.
As for the why to use GCR, some use it to try to reduce metamerism of
certain printers in three color image areas.
GCR, if done correctly will remove the three color components in each color
area that make gray with black and in neutral areas usually the shadows and
in some cases in the neutral image areas down to the highlights.
