Cameras don't actually have a gamut, and the process of shaping their
response range to resemble one is approximate at best. I think the question here
would have to be: "Given that my image has already been massaged to approximate
sRGB, does it matter what particular sRGB profile is tagged to it when its sent
out to my lab?" In this light, it might, and while the difference between
assigning and converting should be minimal or nonexistant, you probably should do
one or the other if they are expecting a specific sRGB profile, not simply
files in an sRGB flavored space.
