If it exceeds the previous gamut in all areas, then you should be able to get all the colors you got before. Differences in black depth, gloss, bronzing, etc... can show up between inksets as well, so keep that in mind.

If a file is in a reasonable RGB space, then it should print similarly with either set, if all colors are in gamut of the smaller set. If you wish to lose your enlarged gamut, you can treat the previous inkset as a printing press, that is to say a device you wish to emulate, and do a cross profile device emulation conversion to mimic the old set with the new one. For CMYK files its similar, but not quite as trivial.
