you'll have to do all this outside in photoshop I think, the Roland
Colorchoice doesn't allow the felxibility you want as I remember.
Before you take out the old inks try converting a file to the profile
you use now, then send to the rip with colour management disabled.

you should be able to simulate the old inkset's prints using ther new
inkset as long as it does exceed gamut and can print as good a black
too. Of course ytou'll need to use the profile for the old inkset and a
good profile for the new inks to achieve this.
your title suggests you'd perhaps like to use an older profile with the
new inks?

IF the OEM canvas profile is ?accurate? then you can ask Photoshop to
<proof> the OEM canvas on the new new Wide_Gamut_canvas using that
profile.
Any wider gamut device with good black can <simulate> a second device
as long as the gamut is smaller and black no more dense on the remote
(or in your case older) device.
One issue, Roland uses a linearisation tool to linearise the RIP for
different papers, unless you can get nice results with one of their
existing linearisations, you'll need to deal with this to get best
results from the new paper (before profiling it).
