I have a lot of experience using digital cameras from S2 - PhaseOne.
I strongly urge you to shoot in the raw mode. The quality difference is
major.
I am of the opinion that processing the files from Raw to a format of
your choice, even jpg, outside the camera with a bigger computer than
the one that fits in the camera and more controllable software is what
makes the difference - or at least that is my experience.
The lab(s) are at fault for not using profiles. I would voice this to
them.
I think that without using ICC they at least owe you a proof free of
charge.
If you cannot get them to see the light, perhaps sending through a
file from target and doing your own profile could help, if you have
access to profiling software and hardware. In any case it would be
totally in error to convert to your monitor profile. sRGB is still your
best bet. At least limiting the gamut would contain the possibility of
error at the lab somewhat.
In cases where ICC is not used or not getting me close enough I use a
curves correction layer in Photoshop to get the file to look as close
as possible to how the print came back from the lab. Then correct the
image so that it is to my liking and simply turn off the
lab-viewing-corrections-layer and send the file back. After doing this
for a while and with different images I end up with a
lab-viewing-corrections-layer that work quite well for most images on
the first try.
