It's the old trade-off between smoothness and accuracy. If the process you're profiling is reasonably linear, too many patches can make for a significant lack of smoothness compared to fewer patches, with dubious gain of more accurate reproduction of the colors represented by the extra patches.

When the process is significantly nonlinear (as in Epson inkjet through the No Color Adjustment LUT), brute force in the form of thousands of patches is considerably more helpful.
