You hadn't mentioned that you were looking at the Lab numbers. Any
numbers other than the file's current mode represent the conversion
you'll get by choosing that mode from the Mode menu, so yes, the
conversion settings in Color Settings always apply.
For this exercise, you might want to set the RI in Color Settings to
Absolute Colorimetric. That way you'll get the real Lab equivalents...
