Yes the 300 is limited in it's white point control. You can shoot a white
reference and select that as a custom white point . Point is if you assume a
white point in the 10Ds you can assume a known or tested light source for
results bringing the images directly to Adobe or sRGB with Exif tags.
For frequent use the 10Ds is a better choice if you are to use the same or
similar lighting situations.
Adobe Camera raw included in Photoshop CS and the Image viewer converter
tool from Canon both are capable of rendering raw files. I've heard the
Phase One is excellent too but I have not tried it.
