By all means, go for the press!! And let the printer live with the burden of
simulating its own press on its proofer. This is setting un pthe printer to
actually print repeatably, an assumption you can only hope fo. But that
should set a reasonable working target for achievable colors.

You're going to have to test that. But if I were you, I'd generate three of
fourn different profiles with each different total ink limits. Don't go over
300% max, and then down to 280%, 260%. Just to be safe. Then test the
profiles by transforming RGB to CMYK and go back to press to see how your
profiles fare.
