This is definitely on the responsibility side of the photographer if the
said photographer is going to edit his/her images. And what photographer
wouldn't?
If by omission of details above you're using a custom profile as source
then you'll already be quite into extracting the max quality and color from
the capture. To continue the chain with a similar capture space but one that
is device independent you'd want to use a large working space. Bruce Fraser
would suggest ProPhoto rgb Kodak in this case. For 16 bit this is fine for 8
bit something more less distance between steps will be better suited.
IF a prepress house want to just convert without editing then source to
destination either proofer or press is possible yet maybe less than optimal
considering the clipping that may be necessary depending on image content.
