Hi Kevin
Distiller will let you tag data in a PDF with any profile, but the key thing
is to make sure the data is in the desired colour space in the application
creating the postscript. For example in a typical early binding workflow
you'd make sure everything in Xpress or InDesign was converted to a CMYK
profile before being placed and then you can choose to let Acrobat tag the
data with that same profile.
If you want to convert data from one profile to another then do it before it
gets to Distiller, or afterwards to the PDF with something like Greatg's
iQueue.
I'd also point out that some workflows may have problems with tagged PDFs
and it is always best to check with suppliers or customers before supplying
tagged PDFs.
