I don't think you're overlooking the obvious: Distiller 6 is unable to
convert colors from, say, RGB to CMYK or CMYK to CMYK. Yeah, what's the use
of convert everything to sRGB? All I've found Distiller good for is to "tag"
colors. It will tag CMYK images and objects with the CMYK profile of my
choice but it won't do CMYK conversions. I'm surprised it can't convert to
anything other than US Sheetfed Uncoated v2 as it lets me use any profiles
in my library?
Personnally, I don't use Distiller to make PDFs. Because I put my layouts
together with InDesign and convert as I see fit at either the Export to PDF
time or the Print to my printer time. InDesign is able to convert almost
anything to anything.
