*since I first posted this to the Adobe InDesign forum, I've been able
to get the PDF to preserver the black type with Acrobat's convert
colors. However, when I set a device simulation profile, the black
type again changes to 4 color, but the type in the original EPS
remains single color black.
When doing simulations (proofing), k only black always becomes rich
black. This is of course in my opinion bad design, but it's being
worked on (it's a little complicated).
The reason your EPS is immune to this is because ID 2 doesn't color
manage EPS at all. Device values are printed as is.
When not doing simulation, this conversion will occur if the Document
CMYK profile is different from the Printer Profile (destination profile
when printing). Again in ID 2 the EPS is immune. In ID CS and CS2 the
EPS is immune by default, but if it has an embedded profile (you can't
assign one to EPS), then it can be color managed.
