Yes, gray color space is fine in any allowed by ICC specs position for device and devicelink profiles.

Not exactly,
Internal format for Prinergy is PDF, so everything at the beginning is converted to PDF, if it's not already and at the end from PDF if it's desired.
PDF page can contain lines, texts, rectangles, curves and so on and those objects are considered to be graphic.
PDF page can also include images.
It's possible to set up different settings (different profiles or no profiles, different rendering intents for graphic and image objects independently)
Because PDF format is allowed to have different settings for each object (you can have different ICC profile for each letter on the page) and that will be honored, but can be overwritten by global settings.
