"AM" stands for "Amplitude Modulation": the dots have fixed frequency based upon a grid, but their size varies, as is the case with traditional halftone screening.
"FM" stands for "Frequency Modulation": the dot size remains constant (for example, 10 microns), while the frequency varies freely (closer together or more separate from each other, independent of a grid).
