Or use a greyscale ICC profile made from measuring a step wedge with QTR Create ICC.

If you load the CMYK black channel as a grayscale profile, it just uses the black ink's dot gain. The black generation parameters for CMYK have no influence (it wouldn't work very well if they did)!
Ah thanks. That’s cool. Makes perfect sense. So this eliminates the need, assuming a good profile, to measure and enter via gray-custom dot gain as has been suggested.
